Prepare the Watermelon: Wash and cut the watermelon into chunks. Remove any seeds if necessary.
Blend the Juice: In a blender, blend the watermelon chunks until smooth.
Strain the Juice: Pour the blended watermelon through a fine-mesh sieve to remove any pulp. You should have about 4 cups of juice.
Simmer and Reduce: Pour the strained juice into a large, heavy-bottomed pot. Bring to a low simmer over medium heat. Stir occasionally to prevent sticking. The juice will thicken and reduce significantly as the water evaporates. This can take 2-3 hours.
Thicken the Honey: Continue simmering until the juice reduces to a thick syrup with a deep amber color.
Cool and Store: Remove the pot from heat and let the watermelon honey cool completely. It will thicken further as it cools.
Transfer and Refrigerate: Once cool, transfer the watermelon honey to a clean jar and store it in the refrigerator.
