Ingredients:
1 c zucchini grated and drained well
1 Egg
1/3 c breadcrumbs
1/4 c Parmesan cheese grated fine
1 clove garlic grated fine
2 tbsp fresh chives chopped
1 tbsp fresh parsley chopped
1 tsp fresh basil chopped
1 tsp fresh oregano chopped
pinch of salt and pepper
tomato sauce for dipping
Directions:
Step 1: Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Step 2: Apply cooking oil to a baking sheet.
Step 3: Grate the zucchini with a box grater. Place them onto a clean towel.
Step 4: Wring the grated zucchini to remove most of the water.
Step 5: Add all the ingredients into a medium mixing bowl. Stir until well combined.
Step 6: Make small balls out of the mixture.
Step 7: Arrange the balls onto a baking sheet.
Step 8: Place the baking sheet inside the preheated oven and bake for about 15 minutes or until golden.
Step 9: Remove from the oven and allow them to cool for a few minutes at room temperature.
Step 10: Serve with marinara sauce.
