Ingredients:
6-8 lemons (organic, preferably unwaxed)
1/4 cup coarse sea salt (more if needed)
1-2 extra lemons for juice
Sterilized glass jar with airtight lid
Optional spices: bay leaves, peppercorns, cloves (for extra flavor)
Instructions:
1. Prepare the lemons:
Wash the lemons thoroughly to remove any dirt or wax.
Cut off both ends of each lemon.
Cut each lemon into wedges lengthwise or crosswise, without cutting all the way through, leaving the lemon at the bottom intact.
