Preserving lemons in jars is a traditional method that not only extends their shelf life but also enhances their flavor. This process allows you to keep lemons fresh and usable outside of the refrigerator for up to a year. Preserved lemons are often used in Mediterranean and Middle Eastern cuisine, giving dishes a unique spicy and savory flavor.
So you can keep lemons at home and enjoy them for months!
Ingredients:
6-8 lemons (organic, preferably unwaxed)
1/4 cup coarse sea salt (more if needed)
1-2 extra lemons for juice
Sterilized glass jar with airtight lid
Optional spices: bay leaves, peppercorns, cloves (for extra flavor)
Instructions:
1. Prepare the lemons:
Wash the lemons thoroughly to remove any dirt or wax.
Cut off both ends of each lemon.
Cut each lemon into wedges lengthwise or crosswise, without cutting all the way through, leaving the lemon at the bottom intact.
