How to Follow
Get the Mold Ready:
Grease a muffin pan with butter and dust it with flour. For the most accurate results, choose a mold that fits 12 muffins.
Get the Batter Ready:
- In a mixing bowl, whisk the egg.
- Add the sugar, salt, and vanilla sugar, and stir until creamy.
- Gradually add the milk and vegetable oil, whisking constantly.
- In a separate bowl, mix the flour and baking powder.
- Slowly incorporate the flour mixture into the wet ingredients, whisking constantly.
Get the Topping Ready:
- After peeling, coring, and chopping the apple, toss it with the lemon juice to prevent browning.
- Add the chopped almonds and raisins to the apple mixture.
Mix the cinnamon and sugar together in a small bowl.
Put the Muffins Together:
- Pour the batter into the prepared muffin pan.
- Evenly distribute the apple, almond, and raisin mixture on top of the batter.
- Sprinkle the cinnamon and sugar mixture over the top.
Preheat the oven to 180°C (350°F) and bake for 20 to 25 minutes, or until a toothpick inserted in the middle comes out clean. Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to finish cooling.
Optional: To make a glaze, spread apricot jam over the cooled muffin tops for an extra delicious touch.
