- ½ cup vegetable oil
- 1 teaspoon vanilla extract
- 1 cup grated carrots (about 2 medium carrots)
- ½ cup chopped walnuts or pecans (optional)

- ½ cup unsalted butter, softened
- 2 cups powdered sugar
