The carrot provide a natural sweetness balanced by warmth cinnamon, toast walnuts, and cream cheese frosting.Carrot cake receives terrible rap due to fact it may be very dry. This homemade carrot cake cake is so moist because of one secret ingredient: vegetable oil!
Ingredients:

- 2 cups of all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 1/2 cups granulated sugar
- 3 large eggs
- 1 cup vegetable oil
- 2 cups grated carrots
- 1 cup chopped pecans or walnuts (optional)

- 8 oz soft cream cheese
- 1/2 cup unsalted butter, softened
- 4 cups confectioner’s sugar
- 2 teaspoons of vanilla
