  1. Activate the Yeast:
    • In a large bowl, mix 10g sugar and 10g dry yeast with 400ml warm milk.
    • Let the mixture sit for a few minutes until the yeast activates and becomes frothy.
  2. Combine Wet Ingredients:
    • Add 30ml olive oil and 40g yogurt to the yeast mixture.
    • Stir well until all ingredients are thoroughly combined.
  3. Mix in Dry Ingredients:
    • Gradually add 600g flour and 8g salt to the mixture.
    • Stir with a spoon until the dough starts to come together. The dough should be soft, but not sticky.
  4. Knead the Dough:
    • Transfer the dough to a floured surface and knead by hand for about 10 minutes until it becomes smooth and elastic.
  5. First Rise:
    • Place the dough back in the bowl, cover with a clean cloth, and let it rise in a warm place for about 1 hour, or until it doubles in size.
  6. Shape the Dough:
    • After the dough has risen, punch it down to release the air.
    • Divide the dough into two equal parts, roll each portion into a ball, and then roll out each ball to a 30 cm (12 inches) diameter circle.
    • Use a food mold or a soup plate to cut the dough into desired shapes. Gather and knead the remaining dough lightly.
  7. Prepare for Baking:
    • Arrange the dough pieces on a baking tray lined with parchment paper.
    • Let the dough rest for 5 minutes while preheating your oven to 250Β°C (482Β°F).
  8. Bake the Flatbreads:
    • Bake the flatbreads in the preheated oven for 6-7 minutes, or until they are lightly golden and cooked through.
    • Remove the flatbreads from the oven and let them cool slightly before serving.

Serving Suggestions:

  • Serve warm with butter, cheese, or as a side dish with soups and stews.
  • Great for making sandwiches or wraps.
