Ingredients
Nougat Layer:
2 cups granulated sugar
1 cup light corn syrup
¼ cup water
2 large egg whites, room temperature
1 teaspoon vanilla extract
1 ½ cups roasted peanuts or almonds, chopped
Chocolate Coating (Optional):
12 ounces semisweet or dark chocolate, melted
Directions
Prepare the Nougat Mixture:
Line an 8×8-inch baking pan with parchment paper, making sure there is some overhang on the sides to help lift the nougat out later.
In a saucepan, mix together the granulated sugar, light corn syrup, and water. Cook over medium heat, stirring occasionally, until the mixture reaches 260°F (127°C) on a candy thermometer.
While the syrup is heating, whip the egg whites in a large bowl until stiff peaks form.
