Prepare the Dry Ingredients:
In a large mixing bowl, combine the dry yeast, sugar, salt, and flour. Mix well to evenly distribute the ingredients.
Make the Dough:
Add olive oil and water to the dry ingredients and mix thoroughly until a sticky dough forms. Knead the dough for a few minutes until it comes together smoothly. Cover the bowl with a clean cloth or plastic wrap and place it in a warm spot. Let it rise until it has doubled in size, which should take about 3 hours.

Once the dough has risen, coat a baking sheet with a bit of olive oil to prevent sticking.

Crumble the feta cheese and fold two-thirds of it into the risen dough. Make sure the cheese is evenly distributed throughout the dough.

Sprinkle the remaining one-third of the cheese (both feta and grated Kasseri) over the top of the dough. Add a generous amount of fragrant oregano for added flavor.
Bake the Flatbread:
Place the baking sheet in the preheated oven and bake for about 40 minutes or until the flatbread is golden brown and the cheese is melted and bubbly.
