Healthy Oatmeal and Cheese Pancakes Recipe

Directions:

  1. Prepare the Oatmeal:
    • In a blender, grind the oatmeal until it becomes a coarse flour.
  2. Mix the Batter:
    • In a large bowl, whisk together the eggs and milk until well combined.
    • Add the ground oatmeal, chopped parsley, grated cheese, salt, dry Provençal herbs, and chili flakes to the egg mixture. Stir until all ingredients are evenly incorporated.
  3. Cook the Pancakes:
    • Heat a little oil in a large skillet over medium heat.
    • Pour portions of the batter into the skillet to form pancakes, spreading them out evenly.
    • Sprinkle a pinch of sesame seeds on top of each pancake.
    • Cook the pancakes for about 3-4 minutes on each side, or until golden brown and cooked through. Use a spatula to carefully flip them over.
    • Once cooked, transfer the pancakes to a plate lined with paper towels to absorb any excess oil.
