1. Prepare the Yeast Mixture

- In a bowl, combine 100 ml of lukewarm water, sugar, and 3 tablespoons of wheat flour. Stir in the dry yeast and mix well.
- Cover the bowl with plastic wrap and let it rest for 15 to 20 minutes until frothy.
2. Mix the Dough
- Sift 500 g of wheat flour into a large bowl. Add the salt and mix well.
- Make a small indentation in the center of the flour mixture and pour in the yeast mixture.
- Gradually mix in 350 ml of lukewarm water, stirring until combined.
3. Knead the Dough
- Once the dough begins to come together, add 30 ml of vegetable oil.
- Knead the dough until the oil is fully absorbed and the dough is smooth and elastic.
- Cover the bowl with plastic wrap and let it rest for 15 to 20 minutes.
4. First Rise
- Turn the dough gently, cover again, and let it rest for another 15 to 20 minutes.
- Wet your hands and turn the dough once more. Cover and let it rise for 50 to 60 minutes, or until doubled in size.
5. Shape the Dough

- Generously dust your work surface with flour. Transfer the dough to the surface and flatten it gently.
- Fold the dough several times to build structure, as shown in the video.
6. Portion and Second Rise
- Dust the top of the dough with flour and divide it into 4 equal portions.
- Place the dough portions on a baking sheet lined with parchment paper. Cover and let rest for 30 minutes.
7. Bake the Bread
- Preheat your oven to 200°C (392°F). Place a bowl of boiling water in the oven for added moisture.
- Bake the bread for 30 to 35 minutes, or until the crust is golden and crispy.
8. Cool and Serve
- Allow the ciabatta to cool completely on a wire rack before slicing.
