Olivier salad is a very simple recipe for preparing the traditional Russian potato salad. It is usually served during the Christmas holidays or throughout the year as a cold appetizer or side dish.
The creamy and tasty Olivier salad is mainly composed of carrots, potatoes, peas, to which you can also add other mixed vegetables and cucumbers, and mayonnaise. The vegetables are already cooked and then added to the mayonnaise, which seasons the dish and binds the vegetables together with its creaminess.
Russian potato salad has uncertain origins, although its creation is attributed to Lucien Olivier, a Belgian-born French chef who worked in a famous Moscow restaurant and created this recipe in the second half of the 19th century.
