Pot Roast with Potatoes and Carrots

Ingredients:

1.5-2kg beef chuck roast 🥩
2 tbsp olive oil 🫒
Salt and pepper to taste 🧂

1 onion, chopped 🧅
4 cloves garlic, minced 🧄
4 large carrots, cut into chunks 🥕
500g baby potatoes or large potatoes cut into chunks 🥔
2 cups beef broth 🍲
1 cup water 💧
2 tbsp tomato paste 🍅
1 tbsp Worcestershire sauce
2 sprigs fresh thyme 🌿
2 bay leaves 🍃

Fresh parsley for garnish 🌿
