This hearty, flavorful soup is perfect for busy days when you want something wholesome and satisfying. Using a jar (or can) of chickpeas as the base, you can whip up this dish in no time with simple ingredients you probably already have in your kitchen.
Ingredients (Serves 2-4)
1 jar (or can) of cooked chickpeas (about 400g), drained and rinsed
2 tablespoons olive oil
1 medium onion, finely chopped
2 garlic cloves, minced
1 medium carrot, diced
1 celery stalk, diced (optional)
1 medium tomato, chopped (or 1/2 cup canned diced tomatoes)
4 cups vegetable broth (or water with a bouillon cube)
1 teaspoon ground cumin
1/2 teaspoon smoked paprika (optional, for a smoky kick)
Salt and pepper to taste
A handful of fresh spinach or kale (optional)
Fresh parsley or cilantro for garnish
Instructions
Sauté the Aromatics
Heat the olive oil in a pot over medium heat.
Add the chopped onion and sauté for 2-3 minutes until translucent.
Stir in the garlic, carrot, and celery (if using) and cook for another 2 minutes.
Build the Base
Add the chopped tomato (or canned tomatoes) to the pot and cook for 2-3 minutes, stirring occasionally, until softened.
Stir in the cumin and smoked paprika for a burst of flavor.
