For the Salad
3 medium beets (peeled and cut into wedges)
3 medium carrots (peeled and cut into sticks)
2 tbsp olive oil
Salt and black pepper to taste
4 oz burrata cheese
2 cups arugula or mixed greens
1/4 cup toasted walnuts (optional)
For the Dressing
3 tbsp olive oil
1 tbsp balsamic vinegar (or red wine vinegar)
1 tbsp honey
1 tsp Dijon mustard
Salt and pepper to taste
For Garnish
Fresh basil or parsley (chopped)
Zest of 1 lemon
