- Prepare the Ingredients:
- Slice the zucchinis and mushrooms, and mince the garlic.
- Cook the Mushrooms and Zucchini:
- Heat the vegetable or olive oil in a large wok or skillet over medium-high heat.
- Add the minced garlic and sauté for about 30 seconds until fragrant.
- Stir-Fry the Vegetables:
- Add the sliced zucchini to the pan and stir-fry for 3-4 minutes until they start to soften.
- Add the sliced mushrooms and continue stir-frying for another 3-4 minutes, until the zucchini is tender and the mushrooms are soft.
- Add the Sauces:
- Pour in the soy sauce and oyster sauce (if using) and stir until the vegetables are evenly coated.
- Taste and adjust with salt and pepper as needed, but remember that soy sauce can be salty, so season lightly.
- Finish the Dish:
- Drizzle sesame oil over the stir-fry and toss everything together to combine.
- Remove from heat and garnish with chopped green onions.
- Serve:
- Serve the stir-fried zucchini and mushrooms over cooked rice or noodles.
