Instructions:

  1. Prepare the Ingredients:
    • Slice the zucchinis and mushrooms, and mince the garlic.
  2. Cook the Mushrooms and Zucchini:
    • Heat the vegetable or olive oil in a large wok or skillet over medium-high heat.
    • Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Stir-Fry the Vegetables:
    • Add the sliced zucchini to the pan and stir-fry for 3-4 minutes until they start to soften.
    • Add the sliced mushrooms and continue stir-frying for another 3-4 minutes, until the zucchini is tender and the mushrooms are soft.
  4. Add the Sauces:
    • Pour in the soy sauce and oyster sauce (if using) and stir until the vegetables are evenly coated.
    • Taste and adjust with salt and pepper as needed, but remember that soy sauce can be salty, so season lightly.
  5. Finish the Dish:
    • Drizzle sesame oil over the stir-fry and toss everything together to combine.
    • Remove from heat and garnish with chopped green onions.
  6. Serve:
    • Serve the stir-fried zucchini and mushrooms over cooked rice or noodles.
