Sous vide method:
Choose meat: Choose a cut of meat of your choice – from a tender fillet steak to a slow-cooked roast. Fattier cuts of meat like ribeye steak, chicken thighs or beef brisket are best.
Preparation: Season the meat with salt, pepper and other spices of your choice. Add fresh herbs like rosemary or thyme if you like. Place the meat in a vacuum bag and seal it.
Sous-vide cooking: Place a sous-vide stick in a water bath and heat it to the desired temperature (e.g. 55-60°C for tender, pink steaks). Let the meat cook in it for 1-4 hours, depending on the thickness of the piece.
