2 large red onions, thinly sliced
1/2 cup white vinegar
1/4 cup honey or maple syrup
2 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon crushed red pepper flakes (optional, for a little heat)
1 tablespoon fresh thyme or rosemary (optional)
1/2 cup water
Directions:
Prepare the onions: Start by peeling and thinly slicing the red onions. The thinner the slices, the better they will absorb the marinade and soften during cooking.
Make the marinade: In a medium bowl, combine the white vinegar, honey (or maple syrup), olive oil, salt, black pepper, and optional crushed red pepper flakes. Whisk together until the honey is dissolved and the mixture is well combined.
