- Preheat the Oven:
- Preheat your oven to 180°C (350°F). Line a cupcake pan with paper liners or lightly grease the molds.
- Prepare the Wet Ingredients:
- In an electric mixer, combine 2 large eggs, ½ cup granulated sugar, ½ cup milk, ½ cup butter or ghee, and 1 teaspoon vanilla extract. Mix on medium speed for about 4 minutes, until the mixture is well combined and smooth.
- Combine Dry Ingredients:
- In a separate bowl, sift together 1 ½ cups all-purpose flour, 1 tablespoon cornstarch, 1 teaspoon baking powder, and a pinch of salt.
- Mix Dry and Wet Ingredients:
- Gradually add the dry ingredients to the wet mixture, mixing on low speed. Continue mixing until the batter is smooth and fully combined. Be careful not to overmix.
- Add Chocolate:
- Gently fold in dark chocolate pieces into the batter. You can use as much or as little chocolate as you like, depending on your preference.
- Fill the Cupcake Molds:
- Pour the batter into the prepared cupcake molds, filling each about 2/3 full.
- Bake:
- Place the cupcake pan in the center of the preheated oven. Bake for 15-18 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
- Cool and Enjoy:
- Allow the cupcakes to cool in the pan for a few minutes, then transfer them to a wire rack to cool completely before serving.
