Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 180°C (350°F). Line a cupcake pan with paper liners or lightly grease the molds.
  2. Prepare the Wet Ingredients:
    • In an electric mixer, combine 2 large eggs, ½ cup granulated sugar, ½ cup milk, ½ cup butter or ghee, and 1 teaspoon vanilla extract. Mix on medium speed for about 4 minutes, until the mixture is well combined and smooth.
  3. Combine Dry Ingredients:
    • In a separate bowl, sift together 1 ½ cups all-purpose flour, 1 tablespoon cornstarch, 1 teaspoon baking powder, and a pinch of salt.
  4. Mix Dry and Wet Ingredients:
    • Gradually add the dry ingredients to the wet mixture, mixing on low speed. Continue mixing until the batter is smooth and fully combined. Be careful not to overmix.
  5. Add Chocolate:
    • Gently fold in dark chocolate pieces into the batter. You can use as much or as little chocolate as you like, depending on your preference.
  6. Fill the Cupcake Molds:
    • Pour the batter into the prepared cupcake molds, filling each about 2/3 full.
  7. Bake:
    • Place the cupcake pan in the center of the preheated oven. Bake for 15-18 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
  8. Cool and Enjoy:
    • Allow the cupcakes to cool in the pan for a few minutes, then transfer them to a wire rack to cool completely before serving.
