2. Spread the Filling
Take one of the large flavored tortillas and lay it flat on a clean surface. Flavored tortillas like spinach or sun-dried tomato not only add a pop of color but also extra flavor.
Spread a portion of the chicken mixture evenly across the tortilla, leaving a small border around the edges. This prevents the filling from spilling out when you roll it up.
3. Roll the Tortillas
Starting at one edge, roll the tortilla tightly, ensuring the filling stays snug inside. The tighter you roll, the better the pinwheels will hold their shape.
Repeat the process with the remaining tortillas and filling.
4. Chill the Rolls
Wrap each rolled tortilla in plastic wrap. This helps them hold their shape and makes them easier to slice later.
Refrigerate the rolls for at least 2 hours, or overnight. Chilling allows the flavors to meld together and makes the pinwheels easier to slice cleanly.
5. Slice and Serve
