Ingredients:

1/4 cup (65 g) peanut butter (smooth or chunky)
2 tablespoons soy sauce or tamari (for gluten-free)
1 tablespoon sesame oil
1 tablespoon rice vinegar or lime juice
1 tablespoon sriracha or chili paste (adjust for spice preference)
1 teaspoon grated ginger
1–2 teaspoons maple syrup or brown sugar (optional, for balance)
1/4 cup (60 ml) warm water (to thin the sauce)
For the Noodles and Vegetables:
8 oz (225 g) rice noodles, soba noodles, or spaghetti
1 cup broccoli florets
1 medium carrot, julienned
1/2 red bell pepper, thinly sliced
1/2 cup shredded purple cabbage (optional)
1/4 cup chopped peanuts (for garnish)
